Ultimate Crispy Roast Potatoes
Perfect fluffy & crispy roast potatoes perfect for Sunday roasts and Christmas Dinner.
To make this recipe you will need:
1kg potatoes – peeled and cut in to even sized pieces
100ml olive oil or use goose, duck or beef fat
1 spoon flour
Sea salt
And here’s how to do it…
Preheat your oven to 200C.
Put the potatoes into a large pan. Cover with cold water, add a little salt and put a lid on. Heat until it reaches a rolling boil, take the lid off, lower the heat and cook for a few minutes more until they are just starting to feel tender – don’t over cook, you are looking for them to be par-boiled.
Drain the potatoes well in a colander. Shake them gently to rough up the edges a little. Sprinkle with flour, shake again and sprinkle with flour again so they have a light coating all over. Sprinkle a little salt over.
Put the oil or fat into a large roasting dish – it needs to be big enough to take your potatoes in a single layer. Heat in the oven for a few minutes until really hot. Add the potatoes and turn them over so they are coated all over. Spread them out into a single layer and put in the over to roast for 20 minutes. Turn them over again and put back in the oven for 20 minutes or until they are golden and crispy.
Scatter with sea salt flakes and serve straightaway.
