Peanut Stir-fried Beef
A great alternative to buying a takeaway. Serves 4-5 people and is quick and simple to cook.
To make this recipe you will need:
70g creamy peanut butter
1 tablespoon soy sauce
1 tablespoon brown sugar
2 teaspoons Sriracha, or more, to taste
2 tablespoons vegetable oil
500g beef stir-fry strips
Salt and freshly ground black pepper, to taste
Stirfry veg mix - broccoli, spring greens, carrots, onions etc depending on what you have available. Cut up in to small pieces or slices so they will quickly cook.
1 spring onion, thinly sliced
2 tablespoons peanuts, chopped
And here’s how to do it…
In a large bowl, whisk together peanut butter, soy sauce, brown sugar, Sriracha and 2 tablespoons water; set aside.
Heat vegetable oil in a large saucepan over medium high heat. Add beef and cook until browned, about 3-4 minutes; season with salt and pepper, to taste and set aside. Add the veg in to the pan and stirfry for 5-7 minutes until just cooked. Add the beef back in.
Stir in peanut butter mixture until well combined, and cook for another 1-2 minutes.
Garnish with spring onion and peanuts.
Serve with rice or noodles.
