History of the Tunis Cake
For many people Christmas is simply not complete without a Tunis Cake to grace their table. A stable of many Christmas table throughout the 70's and 80's it then got discontinued from many shop shelves and all but disappeared. In recent years enthusiasm for this delicious yet garish cake has revived and they are now sought after amongst those in the know!
The story of its invention is a little hazy but it seems to have originally been developed by a Scottish bakery in the 1930's who merged with McVities & Price in 1948 to form United Biscuits. The modern era Tunis Cake that so many people have fond memories of was produced by McVities in 1973, and subsequently copied by M&S amongst others it became an institution in many households across the country throughout the 70's and early 80's when McVities discontinued it. It has continue to be made by a small handful of bakeries, and as demand ebbs and flows by some supermarkets as a seasonal speciality.
Tunis Cake consists of a maderia sponge, topped with a thick chocolate layer, marzipan fruits, and pink & yellow icing.
